LONGMONT- — The opening of her new restaurant in Prospect is literally a dream come true for Comida Cantina owner Rayme Rossello.
“I started dreaming about Comida about five years ago — down to the hours and the colors,” Rossello said this week in between dealing with the myriad last-minute issues that needed to be addressed before today’s opening.
Some may be familiar with Comida and its Mexican-style menu from Rossello’s pink food truck, which has been visiting Prospect for the past year. She launched the truck in 2010 and has frequented neighborhood parties and office parks since then, building up a clientele.
“I started with the truck because that was the dollar amount I had,” Rossello said. “And I loved the concept of the truck. I’m from New York City and I grew up around food trucks.”
