The space occupied by Strings restaurant for 27 years before closing in April will become Humboldt – Farm Fish Wine this fall.
The Concepts Restaurant group, which owns Ignite, Rialto Cafe, Table Mountain Inn & Grill, Hotel Boulderado, Via Baci Italian Bistro, and Woody’s Tavern, leased the space earlier this year, and has been working on the concept for the 1700 Humboldt St. space ever since.
The 4,000-square-foot space will hold 180 seats, including outdoor seating and a private dining room in an atrium. Strings free valet service survived the transition to Humboldt, which will serve lunch and dinner, brunch on weekends, and daily happy hour from 3 to 6.
Humboldt will emphasize reinterpreted classics, and will offer a fresh oyster menu, seasonally rotating salads, small plates and sustainable seafood. A wood grill figures into the kitchen.
