Interview with James Lambatos, president
How did you get involved in this business?
Thirty years ago, I started as a busboy at the Colorado Mining Company restaurant. I was a co-owner of Footers Restaurant in Capitol Hill. I founded Quiznos and Footers Catering. I recreated Baur’s Restaurant and conceived the Ivy at the Glenn restaurant in 2011.
What distinguishes you from other businesses in your category?
The contemporary style of the restaurant and the wonderful ambiance at the Streets of SouthGlenn. I also enjoy the concept of seasonal changes to the menu and upscale service in a welcoming, affordable atmosphere.
What do you like best about your line of work?
Meeting, greeting and catering to people.
What is your business’ biggest challenge?
Keeping food and labor costs in control, and pricing the menu for value.
Something people might be surprised to learn about you or your business:
I have studied all facets of the hospitality industry, from Quiznos, Footers Catering, Baur’s and finally the Ivy at the Glenn. I have spent 40 years in the business and that culminated with election into the Restaurant Hall of Fame by the Colorado Restaurant Association. My adventures have included a Super Bowl commercial for Quiznos along the way.
