Interview with John Vicino, owner
Q: How did you get involved in this business?
A: I have always had a passion for cooking. Born into a large Italian family and the son of an Italian immigrant, I consistently found myself in the family kitchen.
Q: What distinguishes you from other businesses in your category?
A: My recipes are family traditions and I take pride in sharing these homemade recipes with my customers. I personally make all my meatballs, homemade, my eggplant is sliced thin and breaded by me, my chicken parmigiana is also hand-pounded and breaded by me. My sauce is made fresh daily.
Q: What do you like best about your line of work?
A: My vision was a restaurant. However a mobile food service actually lets me share my food with a larger group of people who might not otherwise get to experience my family recipes. I enjoy making my customers happy with my creations.
Q: What is your business’ biggest challenge?
A: Being mobile has its advantages, but the weather can be a disadvantage.
Q: Something people might be surprised to learn about you or your business:
A: I designed and built the kitchen on the truck myself. I have been preparing Italian dishes for more than 30 years for different restaurants as well as family and friends.
