Interview with Hugo Santana, owner
Q: How did you get involved in this business?
A: I started off selling tortas (Mexican sandwiches) and fresh-squeezed juices in a little concession trailer on Federal Boulevard in the summer of 2004. Eventually, we opened a store on Alameda Avenue, then one in Aurora, Commerce City, Thornton and Houston, Texas. We are getting ready to open our seventh location on Monaco Parkway and Evans Avanue in Denver.
Q: What distinguishes you from other businesses in your category?
A: It’s an authentic Mexico City deli. We have healthy drinks like carrot juice, beets juice and fresh squeezed orange juice, as well as natural fruit drinks. We have watermelon, Cantaloupe, pineapple, cucumber and papaya. Everything is made on the spot. It’s the best place to enjoy a torta and a drink. We have friendly, honest service and the most authentic Mexico City atmosphere. Take a peak at the biggest city in the world through its amazing tortugas.
Q: What do you like best about your line of work?
A: To offer a very authentic meal that a lot food places are trying to imitate.
Q: What is your business’ biggest challenge?
A: Keeping up with the demand. We serve an average of 35,000 people per month between all our locations.
Q: Something people might be surprised to learn about you or your business:
A: Our tortas are called tortugas because they resemble a turtle shell filled with amazing fresh ingredients. Everything is cooked on the spot right in front of your eyes.
