Business is so good at Two Rivers Coffee in that the company is expanding, doubling its seating capacity and moving to a newly constructed café and roastery. Eric Yoachim bought the coffee shop in 2010, and fans rave about two things in particular: how the coffee is brewed with a Clover coffee maker, which brews a cup at a time and is used for the best beans, and about Yoachim’s enthusiasm, and how he takes the time to explain where the beans are grown and just what each tastes like. Yoachim is from Arvada, and locals love how he’s given the Denver suburb a coffee shop with cool ambiance, something they can be proud of.

The grand re-opening, set for January 17, features a new addition: executive chef Christopher Teigland, who recently won the people’s choice award at the 2014 Denver International Food and Wine Festival for his braised pork belly with beet and sunchoke purees paired with Gascon Malbec. His first job was with , and he most recently served as executive chef at Balistreri Vineyards in Denver. At Two Rivers Coffee, he’ll be developing a menu that pairs well with gourmet coffee.
What might that be? For starters, he said, think pork belly spring rolls.
Given that he won the Denver International Food and Wine festival with a pork belly creation, thatap a great start.
The new Two Rivers Café & Roastery opens Jan. 17 at 7745 Wadsworth Blvd. in Arvada.
