ܰ’s Restaurant and Listening Lounge opens this Friday in the historic Baur Building in Denver’s entertainment district at the intersection of 15th and Curtis streets. Formerly , the new restaurant is owned by chef Dory Ford, the chef-owner of Aqua Terra Culinary located on the Monterey Peninsula of northern California that focuses on sustainability and local foods.

To execute his cordillera cuisine concept–rugged as the Rockies and the Cordillera mountain region of the Philippines, featuring lots of meat–he’s hired Robert Grant as executive chef.

Grant once worked at Thomas Kelly’s Bouchon in Las Vegas, spent lots of time working farms in Spain and Italy, and most recently comes from Massachusetts, where he worked as executive chef at Belly Wine Bar and The Blue Room in Cambridge – and also as charcutier at Savenor’s Butcher and Market, which happened to be the favorite butcher shop of Julia Child.

The 9,000 square-foot restaurant still has its vintage sign out front, and will eventually have a full charcuterie.
