Chipotle has gone GMO-free, and it would be refreshing if co-CEO Steve Ells could simply admit it’s a way to further differentiate the chain from competitors and meet the desire of many customers.

Good business, in short.

But, no. As is often the case with Ells, the public instead gets a dose of sanctimony, too. “They say these ingredients are safe,” “but I think we all know we’d rather have food that doesn’t contain them.”

Yes, “they” — he means scientists and government agencies — say genetically modified food is safe. But Ells, the fast-food exec, knows better than to trust their expert assurances. Especially when his clientele doesn’t.
