One of the top new restaurants in the competitive pizza market is coming to Colorado.
PizzaRev, known as a leading contender in the race to dominate the gourmet “better pizza” scene, will come to Boulder’s Twenty Ninth Street mall on Aug. 12.
A second location will open in Lafayette at the end of 2015, or early 2016 at the latest.
“We’re incredibly excited about the Boulder location,” said Randy Chilton, a franchise partner who’s lived in Westminster for 17 years. “The site had been a Massage Envy, and it was empty, next to Chipotle and Smashburger.”
For a business that wants to become what is to burritos, itap a good location – not just between two of the top fast-casual concepts in the country, but also in a college town, which are known to do well with pizza.
PizzaRev is one of about 9 brands competing to be the leader in the gourmet, build-your-own pizza market. Another is, which came to Aurora in January, and Live Basil, started in Denver by Smashburger entrepreneurs Tom Ryan and Rick Schaden.
Chilton’s business partners include his wife, Deanna, and Doug Koch, who owns and operates 90 Denny’s restaurants and 6 Del Taco restaurants.
They chose PizzaRev because of its success. For two years in a row, it placed in the top 15 restaurants on the annual Top 100 Movers and Shakers rating published by FastCasual.com.
In 2013, PizzaRev landed a strategic partnership with the popular Buffalo Wild Wings – a fast move for the California-based PizzaRev, which launched in 2012 and now has 17 corporate restaurants and 10 franchises in 12 states.
At PizzaRev in Boulder and Lafayette, crust selections include gluten-free, and there are four signature sauces, including an organic red sauce, plus artisanal cheese and more than 30 fresh ingredients, locally sourced when possible.
