The new restaurant Postino WineCafe, which opens this Wednesday in LoHi in the former Denver Book Binding Company, came to town because of connections. The owners, Lauren Bailey and Craig DeMarco of Arizona-based Upward Projects, met David Birzon, CEO of , when he opened a Snooze next to their restaurant in Phoenix.

“We wanted to come to Denver, we’re big fans, ” said DeMarco. “David had already looked at this (LoHi) space but decided to go to Union Station, so his real estate agent showed it to us, and we loved it.”

It was perfect for this mission of transforming old buildings with lots of rich history into modern wine cafes. The first Postino, opened in 2001, is housed in the historic Arcadia Post Office Building.

In Denver’s Postino, the first outside Arizona, this history of the space is emphasized by a large wall that Bailey built from repurposed books, stacked end to end, then glued to the wall to create an eye-catching art installation.

Located at the corner of 17th and Erie streets, Postino boasts a large patio overlooking the skyscape of downtown Denver — one of the treasured benefits of landing a good restaurant location in .

At Postino, the menu includes the Butcher’s Block ($14) that’s an assortment of artisan meats and cheeses served with white bean hummus, asparagus, olives, nuts and crostini.

Bruschetta boards ($14) can be customized by choosing among more than 10 options, including brie and apples with fig spread, salami with pesto, and ricotta with dates and pistachios.

There’s also a tasty range of panini, along with soups and salads.
