Two popular restaurateurs are opening a new restaurant in the Galvanize in the bustling neighborhood on Platte Street near downtown Denver.

Chef Steven Redzikowski and beverage director Bryan Dayton — the partners behind and Oak at Fourteenth in Boulder — will open a fast-casual rotisserie restaurant called Brider this November.

Brider, which is French for “tying a piece of meat,” emphasizes the rotisserie concept

“I’ve always had an obsession with rotisseries,” said Redzikowski. “So that came to mind when I thought about what element I’d like to be cooking with.”

Both Acorn and Oak feature wood-fired cookery, but Brider will have its own unique concept.

A large rotisserie is enroute from Chelles, France, where the Rotisol company has been crafting state-of-the-art rotisseries since 1954.

Redzikowski is now planning the menu, which will feature such rotisserie cooked meats as chicken, pork, and lamb leg.

Galvanize, a hub for tech-startups and entrepreneurs located at 1644 Platte St., offers a built-in lunch crowd with 450 office workers in the building. Brider will be located on its main floor.

And, to attract a strong breakfast crowd, the partners hired a pastry chef, Michael Conti, from Chicago.

“He’s a stud,” said Redzikowski. “He’ll be splitting his time between all three of our restaurants.”

At Brider, his job will be to fill a large marble counter — five feet by four feet — with “fresh Danish pastries, cookies and brownies that he replaces every day,” said Redzikowski.

The restaurant, which will have 75 seats, will also offer salads and sandwiches, plus a beverage program with pull taps offering beer, soda, wine and cocktails.

They plan to open Brider in early November.
