Interview with Clinton Scott, general manager
Q: How did you get involved in this business?
A: I started as a busser and worked through high school then moved up to a server in college and then a bartender. I continued to work at the grill while working days at an engineering firm. Eventually, I was offered the general manager position and here I am now.
Q: What distinguishes you from other businesses in your category?
A: We are a unique restaurant in that we have an extremely large regular customer base due to our awesome owner and staff. We are much more informal and laid back than regular restaurants. The owner is a Puerto Rican from New York, so she has a fun amount of sass and attitude that people love. We have very low turnover, which goes against the industry standard. Most of our servers and bartenders have been here five-plus years. All of this creates a very familiar and fun place to visit with consistent service.
Q: What do you like best about your line of work?
A: I love talking to the different people from all walks of life. The best part is to see the variety of people from each concert (at nearby Red Rocks Amphitheatre) night to night. The happy hour crowd is like a big extended family that comes in and talks and everyone knows each other — makes for a very fun work day.
Q: What is your business’ biggest challenge?
A: The winter time is a tough time for not only us but the whole town of Morrison. Without Red Rocks concerts, racing events and good weather for outdoor activities, the town becomes much slower.
Q: Something people might be surprised to learn about you or your business:
A: In 2001, we had a massive fire that almost put us out of business. But, due to the hard work of our owner and all her friends and customers who pitched in to help repair everything, she made it all work.
