Interview with Dave Pruett, owner
Q: How did you get involved in this business?
A: I opted out of using my microbiology and cell science degree to become a doctor and decided to go to culinary school to become a chef.
Q: What distinguishes you from other businesses in your category?
A: We make almost everything from scratch and limit the size of our business to ensure that we are able to cook and prepare food the way I was trained. We also work out of a $12 million private school offering a healthy alternative school lunch program to the kids who attend the school in partnership with the Evergreen Country Day School.
Q: What do you like best about your line of work?
A: Cooking is a passion that brings me great joy. Helping brides bring their lifelong vision to their wedding day is something that I take great pride in, as well. The planning and knowledge that we provide for them really helps them out on their big day.
Q: What is your business’ biggest challenge?
A: Staffing, insurance and taxes. We are also a catering company in the mountains, so snow travel is a close fourth.
Q: Something people might be surprised to learn about you or your business:
A: Most people are able to figure out that fresh tracks represents the purest form of a perfect ski day. Getting the fresh tracks on that perfect ski day can prove to be difficult, but has a high payoff in the end. Fresh Tracks represents a great quality of food and pride in doing things the right way and it makes it worth the effort in the end. People also like the idea that I have a degree in microbiology and cell science and now own a catering company.
