If you’re like us, every time you go to Vail, you run into the same age-old problem: There isn’t a single place to get a good plate of apres-ski crispy Peruvian octopus.

Enter Pendulum, a modern American restaurant with Latin influences that recently opened in the heart of Vail Village.

From the PlumpJack restaurant group, which also launched White Bison in town this past December, Pendulum looks like an upscale, rustic lodge because, well, this is Vail and everything looks like an upscale, rustic lodge.

Fair warning: You’re not going to find any bargains on this menu. The cheapest main course is $32 and it’s a cauliflower head (yes, really). You’ll also find the classic combo of tater tots and caviar on the menu because, again, this is Vail.

But, hey — when in Vail, do as the Vail-ians do. Order up that $32 head of cauliflower and throw that $24 tots and caviar app in while you’re at it. YOLO, right?
