Scoops of ice cream are so 2016. The latest frozen dessert trend is Thai-style rolled ice cream –f yes, rolled ice cream — and the place to get it is Chaos & Cream, which sets up shop each night Monday through Thursday inside The Source.

Rolled ice cream is different from its pre-made counterparts in that it’s made to order by pouring the liquid base (so…pre-ice ice cream?) onto a large frozen circle. The mix-ins – think strawberries, Oreos and caramel – are poured into the base as it freezes. The whole thing is spread thin over the frozen stainless steel surface like a big ice cream tortilla and then rolled up Little Debbie Swiss Cake Roll-style.

In the end, you get a super-cool (see what we did there?) picture for your Instagram account – er, a tasty dessert.

Chaos & Cream will be rolling out their ‘cream at The Source through the end of August.
