Tonight, two trendy Denver restaurants will join forces in the name of ramen. Here’s what they’re serving.

Temperatures have dipped below freezing in Denver, which is our cue to dip a spoon into a giant bowl of ramen.

Tonight,– dinner with Uncle beginning at 5 p.m. The two restaurants will collaborate on three types of ramen, three types of buns, plus small plates and drinks.

The Italian restaurant and the Japanese izakaya will come together for some interesting culinary combinations, like Kimchi Ramen — which features squid-ink noodles — and Pastrami buns.

In other ramen news, on Monday, Departure will try to settle which of Denver’s trendy chefs (Departure’s Gregory Gourdet, Acorn’s Steve Redzikowski and ChoLon’s Lon Symensma will compete among others) makes the best bowl of ramen at its inaugural . Sadly, the event is sold out.
