
Itap the season of award-winning restaurant renovations: Late last month, Call on Larimer Street closed for a 6-month fix-up; now, Mercantile Dining & Provision at Union Station has closed for a two-week rehab.
The 5-year-old LoDo restaurant — which earned chef-owner Alex Seidel – closed on Monday and will tentatively reopen on Monday, Oct. 22.
Much of the work being done is for the staff, Seidel said, like a new kitchen floor and new stations for bartenders and servers.
But customers should notice a different bartop at the center of the dining room, more wine on display throughout the space and another pastry counter, where the restaurant group’s Füdmill goodies will be showcased.
Some of the changes are aesthetic, while others will bring the restaurantap use and layout up to date.
“There was a time when we thought everybody would just grab sandwiches and go,” Seidel said of the restaurantap location at Union Station. “We didn’t realize the dining room would be full for breakfast and lunch.”
Seidel wants the room to feel lighter and fresher, he said, and the finished product should look more like the second Mercantile location, which is coming to Denver International Airportap A Concourse next year.
