The latest cafe from entrepreneur Mary Nguyen is opening to the public today inside the Colorado State University Spur campus in Denver.

Little Finch, Nguyen’s counter-service eatery and “little” sister concept to the larger Olive & Finch, is inside the campus’ Hydro building at 4777 National Western Dr. and open for breakfast and lunch. It’s the latest addition to her growing roster of restaurants, several of which are in the downtown core.

Just this year, Nguyen has opened Olive & Finch locations inside Union Station, the Denver Performing Arts Complex and Denver International Airport. The sixth in the chain is expected to open by the end of the year in Denver’s Golden Triangle neighborhood.

Her large and rotating food menu is expected to include sandwiches, flatbreads and pastries, Nguyen said in a statement. The beverage list has an array of coffee drinks, cocktails and cold-pressed juices.

The CSU Spur campus spans laboratories, classrooms, greenhouses and test kitchens conducting research and lessons on topics involving hydrology, agriculture and animal health. It neighbors the National Western Complex, site of the annual National Western Stock Show.

Little Finch is the only food vendor at the university open to the public, according to CSU spokesperson Allison Sylte. The cafe is expected to offer catering for special events held around campus.

Nguyen’s Little Finch counter, at 1490 16th St., opened in 2023 before the 16th Street Mall completed its renovation this year. She has envisioned running 10 Olive & Finch locations by the end of 2026, The Denver Post reported earlier this year.
