For the almond dressing:
1/3 cup chopped almonds, toasted
1/3 cup orange juice
1/3 cup vegetable oil
3 tablespoons packed brown sugar
2 tablespoons light rum
1/4 teaspoon salt
1/4 teaspoon paprika
For the salad:
3 bananas, peeled and sliced
2 avocados, peeled, pitted and sliced
2 kiwi, peeled and sliced
1 mango, cut lengthwise in half, pitted and cut up
1 papaya, peeled, seeded and sliced
1/4 cup flaked coconut, toasted
First, make dressing.
In large bowl, gently mix remaining ingredients except coconut.
Just before serving, sprinkle with coconut. Serve with dressing.
