Garlic scape: (skayp) The curly flower stalk that shoots up from garlic in spring. Pick while curly and still tender and subtly flavored. Use in salads, soups and stir-frys. Pesto: purée 1/4 pound scapes and 1/2 cup olive oil, stir in 1 cup grated Parmesan cheese, 3 tablespoons lime or lemon juice and salt to taste. Serve with bread, crackers or pasta.|
