From chef/owner Amy Vitale of Tables (2267 Kearney St.), serves 2.

Ingredients

1/2 pound sushi-grade tuna, diced

1/2 ripe avocado, diced

1 green onion, sliced

1/2 teaspoon each black and white sesame seeds

LEMON-GINGER SAUCE

1 cup lemon juice

1/2 cup soy

1 teaspoon chopped garlic

2 tablespoons fresh grated ginger

1/2 cup rice wine vinegar

Sambal oelek (Indonesian chile paste), to taste

2 cups oil

Directions

In a glass or ceramic bowl, combine tuna, avocado, green onion and sesame seeds.

Combine all sauce ingredients in a food processor. (You will have extra — store in refrigerator.)

Mix tuna with 1/4 cup sauce. Serve with cucumbers, crackers or crisps.
