Clayhouse 2007 Central Coast Adobe White $15

Here’s a white that seems to go with everything. One night, I had it with a quick saute of clams, chorizo and potatoes; the wine has enough richness to stand up to the spicy meat, yet the acidity to pick up the saline snap of the seafood. The next night, I roasted a pork loin marinated in miso, which gave it a rich, sweet, umami flavor, and served it with piles of bitter broccoli rabe. The wine, a blend of chenin blanc, chardonnay, roussanne and viognier, totally took both elements on, the peach-pineapple richness matching the meat’s richness while taming the bitter bite of the rabe.
