Ingredients

1     large egg white

1/4   cup sugar

      Large pinch kosher salt

1/2   teaspoon vanilla extract

2     cups unsweetened flake coconut

Directions

Preheat the oven to 350. In a medium bowl, whisk together the egg white, sugar, salt and vanilla extract until blended. Gently stir in the coconut. Spread the coconut in a single layer on a baking sheet. Bake for 8 minutes, then stir the coconut with a metal spatula. Continue to bake until golden brown, about 5 minutes.
