Q: Hapa changes its server apparel every two to three years. What are you wearing now?
A: For guys and girls we have four outfits total. For the girls, one is mesh, one is a crossover with cherry blossoms, and during the day we have a T-shirt with the transformer logo.
Q: Which one is your favorite?
A: The crossover. You look more presentable. The girls find the mesh one hard — it’s shorter than we would like.
Q: You can pick anything black on the bottom. Are you always in pants or do you wear skirts too?
A: Skirts I find harder to work in. To get our iced tea down from this service station, you pretty much have to climb up on the counter.
Q: Talk to me about those heels. Do you really wear such tall heels on the floor?
A: Yeah, it’s probably bad for my back, but they are pretty cushy. They don’t hurt. On my 14-hour days, these are the only shoes I wear.
Q: Who makes them?
A: Steve Madden.
Q: Hapa’s owner used to be in shoe fashion. How has that background influenced what you guys wear?
A: In a great way. At some restaurants, if you have tattoos they have to be covered; ear gauges and piercings have to be taken out. Mark knows that’s a way for you to present your personality. One girl on staff probably has $5,000 in tattoos and she wears gauges with diamonds or shamrocks. Coming from the fashion world, he expects high fashion. He wants everybody to show their own funkiness.
Q: Does Hapa have ANY rules?
A: Your tattoo cannot offend somebody. And your hair has to be pulled back if it’s longer than your chin.
Q: Tell me about the flower you are using to pull back yours.
A: Our head chef is from Hawaii and he brings all of the girls these flowers when he comes back. A lot of the girls are wearing them right now.
Q: Can you serve with those 3-inch acrylic nails?
A: Oh yeah, I’ve had these forever. I haven’t broken a nail in like three years.
