If your favorite chef has a spring in her step this month, it’s because September is peak produce season in Colorado — the goods are really rolling in. To celebrate, members of the Denver Independent Network of Restaurants will offer special one-week-only menus showcasing Colorado ingredients starting Saturday. Some of what’s on the menu this year:

1515 Restaurant

A $35 fixed-price menu includes gems like Colorado corn chowder, Colorado striped bass or slow-cooked Colorado lamb with raita, and a Colorado peach Melba. 1515 Market St., 303-571-0011,

One of the week’s most innovative menus includes local heirloom pepper soup with Jumpin’ goat feta, a roasted apricot salad, a braise of locally raised goat shoulder, a potato pave with Olathe corn, and a Colorado cherry tart. 38 S. Broadway, 303-777-3505,

Dixons

Highland’s Garden Cafe
