It can be easy to forget the turn onto Main Street that takes travelers into downtown Buena Vista (located at the only stoplight on U.S. 24). But the nearly year-old addition of The Asian Palate, Buena Vista’s first Thai and sushi restaurant, offers reason aplenty to flip on the blinker and stop in for a visit. Owner and head chef Eddie Sandoval brings a wealth of culinary expertise that includes a three- year stint under the tutelage of several experienced sushi chefs at the popular Sato Sushi Bar & Restaurant near Vail along with cooking classes in Thailand and Laos. Sandoval carried his inspiration to the sleepy mountain town beneath the Collegiate Peaks, where his dream of opening an Asian bistro has been met with overwhelming enthusiasm. That’s mostly because of the delicious food prepared with fresh ingredients, including local organic produce and locally raised meats. Fresh fish is delivered three times a week. Lunch and dinner service includes traditional sushi and sashimi, with a few sushi rolls giving a nod to local attractions such as the “Colorado Trail Roll,” “The Numbers,” “The Monarch” and “The Kayak.”
