The “Trilogy triplets” are back with another venture in downtown Boulder.
Three years after selling their Trilogy Wine Bar & Lounge, sisters Jennifer, Jessica and Jill Emich plan to open a new restaurant, bar and “gathering place” in a familiar locale — on 13th Street next door to the space that housed Trilogy for eight years.
The Emichs are targeting a Dec. 1 opening for their Shine Restaurant and Gathering Place at 2027 13th St., a space recently vacated by the short-lived Los Oasis Latin Grill & Cerveceria and previously home to the Boulder Draft House and RedFish New Orleans Brewhouse.
Operators of Los Oasis and the Draft House both cited the size and shape of the 2027 13th St. space as obstacles. The Emich sisters say they hope to use the irregular 6,500-square-foot floorplan — a front open bar area that’s connected to a large back room and brewery by a narrow hallway — to their advantage.
