
Interview with Stacey Marcellus, founder and owner
Q: How did you get involved in this business?
A: After returning to the states from a year in Argentina ,I reconnected with my buddy Ben. I was set on getting involved in the food industry in some shape or form, while he was eager to create a brand associated with something tangible. We decided that we’d create a line of gluten-free, fresh pastas and started mapping out the look and feel of the company. After perfecting the recipes, we discovered that our pastas were also grain-free. In that moment, we decided to move forward as a grain-free food company, not just gluten-free and not just pastas.
Q: What distinguishes you from other businesses in your category?
A: What distinguishes us from other brands in our space are the top-of-the-line ingredients we use and the integrity of our brand and its culture. There are plenty of gluten-free products available in the marketplace but that doesn’t automatically mean that the ingredients they’re sourcing are healthful. Our pastas and cookie dough are made primarily from almond flour, which makes them extremely high in protein and very low in carbohydrates. Our products are made untraditionally but are even more delicious than the original versions made with wheat. Each ingredient is grain free, non-GMO and extremely high end. We appeal to a wide variety of consumers such as people following the Paleo diet, those with celiac disease, gluten-free eaters, diabetics, vegans and anyone who loves delicious, gourmet food. Our branding is a direct reflection of our products — high end, clean and classy.
Q: What do you like best about your line of work?
A: I love being a business owner because it allows me the ability to redefine the way business is done. I believe that every person working with us and for us should be treated with the utmost respect and have the freedom to be themselves. I also love that we are in a position to be a large player in transforming consumer packaged foods into real, healthy food rather than processed garbage. Creating these products is what drives me.
Q: What is your business’ biggest challenge?
A: Our biggest challenge is getting on the shelf of every single store in the country as fast as we’d like to.
Q: Something people might be surprised to learn about you or your business:
A: “Seinfeld” is quoted on a daily — but probably more like hourly — basis in the kitchen.
