Pickled onions and shaved cucumbers augment the usual lettuce and tomato for the Wagyu burger at The Nickel in LoDo’s Hotel Teatro. (Cyrus McCrimmon, The Denver Post)

is a fine addition to downtown Denver’s dining scene, hotel restaurant division. (It’s in the Hotel Teatro at 1100 14th St.)

One of the things I like about is their attention to grace notes and little details. This comes through even in a basic dish such as their burger.

For starters, the kitchen uses Wagyu beef raised by . in Walden, serving it with aged cheddar on a brioche bun. But along with the lettuce and tomato, some other nifty toppings: pickled red onions and sweet-and-sour cucumber slices, which bring a zippy tang to the big umami flavors of the beef.

This shows a kitchen team that’s putting thought into their food.

It’s a lesson home cooks can use when plating a simple ham-and-cheese sandwich. Along with the chips, think about a forkful of habanero-infused pickles, olives stuffed with blue cheese, pickled carrots or green beans, and other goodies.
