I have always been a fan of corned beef hash, and I learned to love the canned stuff as a kid long before it occurred to me that you could actually make the stuff at home. And while I love the latter there is a throwback part of me that sometimes wants the old-school version of my childhood, nicely crisped, please.
So it was I found myself at the Delectable Egg in downtown Denver (1625 Court Place), tucking in to a thin, properly crispeds, spatula-flattened serving topped with two poached eggs. It was sided with their roasted specialty potatoes and paired with buttered wheat toast, a departure from the flour tortillas that is my usual go-to breakfast bread.
And you know, it tasted just like my mom’s corned beef breakfasts, god bless her. Simple, unassuming. Did we mention crispy around the edges?
The Delectable Egg is a go-to morning dining spot for many downtown business people. The room is usually packed with deal-makers, many of them in the oil-and-gas industry and related services. It’s a pleasant, sunny place, and the staff knows regulars by name. I get to read The Denver Post while noshing, and if there isn’t a line out the door — nobody likes a table hog — I’ll work the crosswords.
