Who can resist free gourmet pizza? You can get it this Saturday at Uncle Maddio’s Pizza Joint, which is celebrating its grand opening in Colorado with a free nine-inch customized pizza, where you can choose from a list of 48 toppings.

It’s one of the popping up across the country, which experts called one of the hottest fast-casual franchise concepts of 2014. Premium pizzas, like those made at , are at the forefront of the trend in Colorado, and now comes Uncle Maddio’s, a top contender in the competitive field.

At the soft launch today, customers lined up to taste test a variety of different pizzas. People raved about one of the most the popular signature pizzas — the Steak & Blue with grilled steak, mozzarella, and blue cheese crumbles. Others opted to custom design their own pizzas from a long list of ingredients – six sauces, 27 vegetables, 15 meats, and three types of crust (white, whole wheat, and gluten-free) in three sizes.

James Smethie, the Denver resident who owns the place, walked around greeting people, excited about his new restaurant. “We really like how itap ‘served with love,’” he said, quoting the Maddio’s mantra. “Itap all about customer service.”

Uncle Maddio’s started in Atlanta in 2008, created by founder and CEO Matt Andrew, a co-founder of Moe’s Southwest Grill. It now has 29 locations in 13 states, and plans to open five more Uncle Maddio’s in Colorado. In additions to the pizzas, which cost about $7, the menu includes salads and panini sandwiches.

On Saturday, Jan. 10 from 11 a.m. to 2 p.m. you can get a free build-your-own gourmet pizza with three toppings, as Uncle Maddio’s celebrates its entry into metro Denver.
