The great thing about living in is there’s a constant stream of new places to try – all competing to serve healthy, tasty meals. The latest is NuHu Mongolian Express, which opens in the Golden Triangle on Feb. 12.
It features Asian stir-fry bowls, and when you walk into the place, you see a large section of fresh vegetables. “We wanted to create an almost farmer’s market feel,” said Jeff Martin, the chief operating officer of NuHu, who was working at the restaurant on Tuesday afternoon, preparing for the grand opening.
NuHu Mongolian Express is close to the State Capitol and the , so they hope to draw lots of local workers, art fans, and tourists. With the fast-casual restaurant segment getting so competitive in recent months, each new entrant features its own hook, from farm-fresh ingredients to integrated and sustainable food lines.
“Our unique hook is that nothing in our restaurant is pre-cooked,” said Martin. “All our ingredients are fresh.”
They can also customize food for all sorts of eaters – paleo, gluten-free, and those avoiding certain food allergens. For eaters who might feel overwhelmed by too many choices, there are signature bowls like the Genghis Thai or the Saucy Szechuan.
NuHu is the fast-casual concept of the HuHot Mongolian Grill, which has three metro-Denver locations. Although it started in Missoula, its center of operations is in Denver and many of those employees – including Martin – have lived in Denver for years.
“We’re opening here not just because Denver is a hotbed of fast casual,” he said, “but also because itap our town.”
The grand opening starts b. 12 at 11 a.m. and for the first week, $1 of every stir-fry bowl will be donated to the Civic Center Conservancy, the nonprofit that partners with the City and County of Denver to keep Civic Center Park in great shape.
NuHu Mongolian Express, 1147 Broadway, will be open from 11 a.m. to 9 p.m. daily.
