Two new places will open Monday in the former space of : Habit Doughnut Dispensary and Carbon Beverage Café. They’re linked by a common kitchen, but otherwise, they’re two different places, each with its distinct vibe.

Owner Lisa Ruskaup, concept director at Breckenridge-Wynkoop since 2012, created the places with Denver’s changing demographics in mind.

“I realized there’s a cultural revolution in downtown Denver, an influx of young people with expectations,” she said.

Habit Doughnut Dispensary has a red-cross logo that plays off the green-cross dispensary logo displayed by marijuana shops, and local graffiti artist Pheud created a mural that wraps around one wall.

The scratch-made brioche doughnuts include savory choices, like the Shorty Doowop fritter — with Haystack Mountain goat cheese, sharp cheddar, parmesan and dusted cheese powder from the Savory Spice Shop next door – and sweet choices, like the Bad Lemon, with Lemon Chantilly cream.

The doughnuts are sold individually ($2 to $5 each) or in larger sizes, like the Habit Dozen for $26.

Carbon Beverage Café is more like a neighborhood hangout, a sleek modern space that still has pieces of its history, like the large carriage doors that came from Paris on the Platte, or two of the original doors from Union Station, made from solid cherry, that have been repurposed into common tables.

There’s a large outdoor patio in the back, and a customized beverage bar inside with 18 taps, serving brew like Japanese Rice Lager from Platt Park Brewing Company and cocktails like the Cold Brew Manhattan with bourbon, Noilly Prat vermouth, and clove bitters.

The kitchen is helmed by executive chef Scott Parker, formerly of , with a creative menu the includes bowls like Pizza in a Cup with brioche bites, thick-cut Polidori Pepperoni, mozzarella, and a tasty tomato sauce ($7) ) and Green Eggs N’ Hash, a sunnyside-up egg with smashed tots, green spinach, and Tender Belly ham ($9).

Sandwiches include the Green Goddess BLT ($7) and the Insanity Grilled Cheese ($7).
