Interview with Yvonne Lipson, owner/pastry chef

Q: How did you get involved in this business?

A: I come from a long line of bakers. My great grandmother baked for a lumberjack camp, my grandfather baked in the Army in the South Pacific, my grandmother and aunts also baked and I have been baking since the age of 6. It is something that I have always loved.

Q: What distinguishes you from other businesses in your category?

A: We’ve all been to that wedding or party where the cake looks amazing, but is dry and tasteless. It isn’t enough that dessert looks good; it has to taste amazing, and that’s what we do. We make almost everything from scratch, and we only use natural flavors, real butter and no preservatives. About the only thing we don’t make is fondant, and I’ve not had much demand for that. Our desserts literally melt in your mouth, and make your taste buds do the happy dance!

Q: What do you like best about your line of work?

A: Dessert makes people happy, so I basically have the best job ever. I love everything about my work, except dishes; I don’t love doing dishes. I especially enjoy the creative process. It is so satisfying to help someone pin down what exactly they are wanting, even if they aren’t sure when I first speak with them. Then to execute that design or product and create exactly what they want and seeing the joy on their face when they get it. That is the best part of my job.

Q: What is your business’ biggest challenge?

A: I think the biggest challenge is not having a storefront, which is by design. While this does require people to plan ahead, it also guarantees that whatever they are purchasing is as fresh as possible.

Q: Something people might be surprised to learn about you or your business:

A: Probably the biggest surprise would be that I was a family physician for 17 years prior to opening Yvonne Marie’s Patisserie and that I used baking as a way to relieve stress. I also don’t particularly like eating sweets, though I did at one time.
