Trillium, a Scandinavian-influenced restaurant that operated in Denver’s Ballpark neighborhood, has served it’s last plate of smoked fish and aquavit.
Chef-owner Ryan Leinonen announced the closing. It was a nice four-year run for the Michigan-born chef and his room at 21st and Larimer streets, which . The restaurant won awards, and Leinonen — who previously worked in area kitchens such as Colt and Gray, Root Down and The Kitchen — was invited to cook at the James Beard House in Manhattan.
“I was living my dream, and I had a ton of fun doing it,” Leinonen said via email. “I’ve worked with some absolutely amazing people — people who helped my dream of opening my own restaurant come to fruition — and they’ve all enriched my life more than they’ll ever know. I hope they learned as much from me as I learned from them.”
No immediate plans for a new venture were announced. For now, Leinonen said he was planning to spend time with his family, including a second daughter who just arrived.
“I’ve been working nonstop for the past several years, so I’m going to take a few months off to stay at home,” he said.
