Neighborhood pie shop Hinman’s Bakery closing this week after two years in Park Hill

Owners blamed the closure on construction

A neighborhood pie shop in Park Hill is closing its retail store after two years.

The owners of Hinman’s Bakery, at 4850 E. 39th Ave., on Tuesday posted a message to their Facebook and Instagram accounts announcing that the store will close at 4 p.m. Friday “due to construction.” Hinman’s wholesale business, located in the same building, will remain open.

“With much regret and sadness we will (c)lose the cafe doors for good,” the post reads. “Thank you so much for supporting Hinman’s Cafe for two wonderful years of business!”

Owner John Hinman told The Denver Post Tuesday that his sales have been cut in half over the past two weeks since street construction started along 39th Avenue. That work is expected to last through the summer. He said he’s not ruling out reopening once the construction ends, but he doesn’t want to promise customers.

Fans can still find Hinman’s baked goods throughout the summer at the Union Station Farmers Market, starting on May 11. The breads are also sold at Denver restaurants such as Barcelona Wine Bar, Masterpiece Deli, Sarto’s and Prodigy Coffeehouse.

Hinman is a veteran of Denver’s restaurant scene. After more than a decade in Denver and Boulder restaurants, including time baking for The Post Brewing Company, he started his own wholesale pie business in Park Hill in 2015. He added a cafe component in 2017. Last spring, he was planning on opening a Hinman’s Bakery outpost on East Colfax, , but the deal fell through, Hinman told The Denver Post Tuesday.
