A Fort Collins-based fried chicken restaurant is coming to Denver after five successful years up north.

Music City Hot Chicken and on Wednesday announced their partnership in building a satellite fried chicken kitchen inside the Baker neighborhood brewery.

MCHC Denver is slated to open at TRVE in the Baker neighborhood by late spring.

Jordan and Sam Graf, brothers and owners of the original Music City Hot Chicken, said they weren’t planning a Denver location before talking with TRVE founder Nick Nunns.

“The idea of creating a carbon copy of our Fort Collins operation seemed unrealistic,” Jordan said.

In order to fit the taproom setting, food offerings will be paired down while still including the most popular items: tenders and sandwiches (prepared with “no heat” on up to “flammable”), plus sauces and side dishes.

MCHC sells waffles and marinated melon in addition to some of its more traditional sides, like baked beans and macaroni. serves lunch, dinner and weekend brunch featuring menu items like a Hot Mess waffle sandwich with tenders, a fried egg, bacon, honey butter and Fireball maple syrup.

Both brands share a music- and beer-loving culture. In Denver, TRVE has built a reputation for its heavy metal theme and experimentation in styles at the “Acid Temple,” a 10-barrel brewhouse.

And while the Fort Collins restaurantap vibe is more punk rock, the Grafs say they’re excited to see what evolves from the collaboration in the capital: “Taking our concept and plugging it into an existing culture is going to be fun,” Sam said.
