
Three restaurant concepts are bringing dinner service and afternoon drinks to mountain resort towns at the peak of Colorado’s winter ski season.
The owners of Tavernetta Denver, which on their Bib Gourmand list last year, opened a new location at the Four Seasons Resort and Residences in Vail. It’s the first venture outside of the Front Range for the Frasca Hospitality Group, which is responsible for five other restaurants including Frasca Food and Wine in Boulder and Sunday Vinyl in Denver.
Tavernetta Vail is now open for breakfast and dinner, though è-쾱 hours for decompressing visitors aren’t scheduled to start until Jan. 9, according to the company. The dinner menu boasts several antipasti and meat dishes, including a duck breast with a huckleberry mostarda condiment, sunchoke and winter chicory ($45) and the Bistecca alla Fiorentina, a 52-ounce porterhouse steak (not priced). There are also fresh-made pastas, such as rigatoni with lamb ragu ($36), risotto made with 24-month aged parmesan cheese ($39), and a linguini with Maine lobster and Calabrian chile peppers ($45).
Also open in Vail is Avanti Food & Beverage, a food hall with massive footprints in Denver and Boulder. The business and its partners spent $4 million reconstructing the former Larkspur restaurant and event space at 458 Vail Valley Dr. Just this week, Avanti finally : Powder Crust Pizza, Backyard Burgers, Mediterranean restaurant Boychik, breakfast spot Detoor and Glo Noodle House,

In Aspen this month, husband-and-wife duo Cédric and Ochi Vongerichten opened Wayan, the second location of their Michelin-recommended New York City restaurant. The couple’s shareable dishes, which combine their French culinary tradition and Indonesian heritage, include lobster noodles with black pepper butter and Thai basil, crab fried rice, and pandan passionfruit custard.
“Ochi, our sons and I have cherished our time skiing in this beautiful mountain town for years, and we’re thrilled to bring a piece of our culinary world to the community that has become like a second home to us,” Cédric Vongerichten said in a statement.
Wayan Aspen is located at 614 E. Cooper Ave. and open daily for dinner and è-쾱 service, the latter from 2:30 to 5:30 p.m.
