The Vail Valley is renowned for its high-quality vittles. Top-tier restaurants that captivate the taste buds abound for those willing to drop the big dollars. Thankfully, there’s Vista for those who want the dazzle without the debt. The braised beef short ribs with snap peas and porcini gnocchi tastes like it should cost $40. It’s only $19. Ditto for the $23 seared tuna with red curry potatoes and the $19 Creole-sauced seared salmon. But don’t go thinking Vista is a discount eatery. Chef and owner team Michael and Janine Glennon have built a cozy dining room with all the five-star trimmings, including a big wine cellar that lists toward the $20 to $40 range. Vista’s offseason specials feature half-priced entrees worth a trip to the Vail Valley alone.
