Matzo: MAHT-suh, Hebrew. Usually seen in seasonal grocery-store displays around major Jewish holidays, but available all year round, matzo is a crisp, cracker-like unleavened bread. It’s eaten alone or as an accompaniment to a meal, but is also used in other preparations. Crushed pieces of matzo are soaked in water, then mixed with egg and fried to make matzo brei.
