Pastrami: A deli meat made from beef, usually brisket or round. First seasoned with a blend of salt, pepper, garlic, cinnamon, clove, allspice and coriander (and sometimes fenugreek or cumin), the meat is then cured, smoked, and either roasted or steamed.
