Although this quick sauce could accompany any pasta, it seems tailor-made for the wide ribbons called pappardelle.
Think of them as silky roads for the bits of smoked ham, rosemary and sautéed pine nuts to skip across. If you can’t find pappardelle at the grocery, not to worry; you can purchase sheets of fresh pasta or fresh lasagna sheets, roll a few layers of them in a single tube and custom-cut the noodle widths to your liking.
