Kombu is a long, brownish-greenish-gray seaweed that’s been sun-dried and flattened into sheets. Ubiquitous in Japanese cooking, it is available at Asian markets and natural groceries. Kombu (also spelled konbu) keeps indefinitely. Steep it (with or without dried bonito flakes) for a flavorful soup stock, dashi. Source: Food Lover’s Companion
