The weekly e-mail from brought some salad inspiration: “When making a green salad, buy good, super-fresh leafy greens. . . . Salads are a marvelous stage for nuts, dried or fresh fruits, chunks of cheese and leftover chicken, meat and fish.”
Ingredients
1 1/2 tablespoons fresh-squeezed lemon juice
1 1/2 tablespoons fresh-squeezed orange or blood orange juice
1/2 cup extra-virgin olive oil
1/2 teaspoon dried oregano or 1 teaspoon fresh oregano
Sea salt and freshly ground black pepper
Directions
Put all your ingredients in a small jar and shake vigorously to incorporate. Taste and adjust seasonings to your liking.
Note: Citrus juices are a substitute for vinegar and perfect for winter dressings because these fruits are in season. They are particularly wonderful over grilled- salmon- or shrimp-topped salad.
