Interview with Scott Bauer and Tyson Holzheimer, owners
Q: How did you get involved in this business?
A: About five years ago we had a conversation about opening up a restaurant some day that focused on whole animal butchery, local ingredients and a seasonal menu. After many conversations/arguments, the dream became a reality.
Q: What distinguishes you from other businesses in your category?
A: Butcher’s Bistro is different from other restaurants in a few very noticeable ways. First, we sell exclusively Colorado-sourced meats on both our menu and in our retail butcher case. We cross-utilize everything we butcher by changing the cuts offered on the menu as we work from nose to tail on pigs, cows and lambs. There are other restaurants around butchering pigs and lambs in-house, but Butcher’s Bistro also buys Charolais cows from Colorado Best Beef, dry-aged and processed in-house. It is some of the best beef money can buy.
Q: What do you like best about your line of work?
A: Doing what we are most passionate about on a daily basis. Working in restaurants is what we both love to do and cannot imagine doing anything else.
Q: What is your business’ biggest challenge?
A: Marketing ourselves in detail. We do a lot under one roof. From elegantly composed entrees to shareable plates, butchery, charcuterie, house-made cordials and smoked sausages, we are ultimately an “everything local/everything in-house” restaurant. This is all difficult to explain in a few words.
Q: Something people might be surprised to learn about you or your business:
A: In addition to cows, pigs and lambs, we buy only local cheese, milk, eggs and many produce items. We also have a great Colorado cocktail list and are proud to be the only restaurant in Denver serving Three Barrel beer from Del Norte on tap. Moreover, we offer a true Colorado dining experience that really can’t be found anywhere else.
