Interview with Tony Sano, owner

Q: How did you get involved in this business?

A: I was, one might say, born in the business. My parents, Jim and Caroline Sano, started in the restaurant business in 1952 in Denver. I was raised from an early age having to help them after school and on weekends. Mom went from cooking in the kitchen directly to the hospital, had me and hurried back for the dinner rush, so the story goes.

Q: What distinguishes you from other businesses in your category?

A: I have created a very pleasant atmosphere reminiscent of the supper clubs of the 1940s and ’50s in Denver. It is both casual and chic, having completed the design from entirely repurposed items such as the furnishings, lighting and accessories. One example is that all the chairs are from Denver Public School libraries of the 1950s. Time-tested family recipes that go back generations as well as new versions of old favorites from our scratch kitchen are fast becoming favorites of all who have been guests already. We feature many house-made desserts and daily specials and a very select wine list to complement our dishes. In an area of the city where chain restaurants are plentiful, we are an independent option for those seeking a restaurant nice enough for special occasions, yet casual enough for frequent visits.

Q: What do you like best about your line of work?

A: The pleasure derived from seeing people gather to enjoy good food and friends in a place we have created is quite satisfying. Over the years, I have enjoyed getting to know customers who have become friends and watching their families grow. When guests leave pleased and say, “We will be back,” well, that makes me happy.

Q: What is your business’ biggest challenge?

A: The biggest challenge is getting people in the door. Once they’ve tried us, they return. Our advertising budget prohibits a major campaign. But as they say, word of mouth is the best endorsement.

Q: Something people might be surprised to learn about you or your business:

A: I was the co-owner of a very well-known and loved Italian restaurant in Denver which had its run operated by the Sano family from 1964 until 2004. The Sanos had more than 14 different locations in the metro area including one in Greeley.
