There is a reason people flock to in the morning: Day in and day out, the restaurant at 650 Sherman St. serves some of the best breakfasts in Denver. Service is fast, and the menu has — in sports-speak — a deep bench.
One of the favorite Racines dishes in my rotation is the one dubbed Tostades del Sol. It’s a simple enough dish: Two crispy corn tortillas topped with soft-scrambled eggs, crumbled Mexican-style chorizo, creamy refritos, pico de gallo, white cheddar cheese and guacamole. On the side comes a fire-roasted tomato salsa that is the closest I’ve found to the one served at the dearly departed Ore House in Santa Fe.
Do yourself a favor and order a flour tortilla to finish off that salsa. The tortillas at Racines are warm and pliant — perfect for sopping up anything left on your plate, like that last luscious dollop of guacamole. Who says you can’t have dessert at breakfast?
