Interview with Tim Bennhoff and Joseph Friedman, co-owners
Q: How did you get involved in this business?
A: Both of us have worked in the restaurant industry for many years and crossed paths at one of those restaurants. A conversation took place very quickly about how we could start something together. The idea of a foot truck selling wood-fired pizza seemed to fit the best and, three years later, we rolled out the truck.
Q: What distinguishes you from other businesses in your category?
A: Rolling Dough is a Golden-based food truck and we’re very proud of our Jefferson County roots. We still operate almost exclusively out of the Jefferson County area. We also have an authentic Italian pizza oven which helps us ensure not only a high level of quality, but also an ability to produce pizzas in just 3-4 minutes. A premium on service and speed, along with the quality of food that our truck produces, is also key in distinguishing us.
Q: What do you like best about your line of work?
A: Happy customers. You don’t go into the service industry without the desire to serve. Our love of the job comes from the smiles on the faces of the people we serve. Creating something that gives someone else joy is a special thing that we don’t take for granted.
Q: What is your business’ biggest challenge?
A: Booking. Finding the right spots and organizing our schedule so nothing conflicts. It has gotten easier, but having only so many dates available means making choices.
Q: Something people might be surprised to learn about you or your business:
A: We did not start our food truck as a means to someday open a restaurant. We love food trucks and hope to open many more in the future if we are able, all serving different cuisine.
