Cherry Hills Sushi Co. is open in Denver at 1400 E. Hampden Ave., and it’s the culinary child of husband-and-wife owners Bradford Kim and Olivia Maeng.

Cherry Hills Sushi Co. is a hand-roll bar, offering a curated collection of minimalist sushi, presented in a hand-roll and accompanied with creative sashimi. The restaurant sits just west of the intersection of Hampden and University.

Kim, a trained sushi chef, will lead the kitchen. Maeng, a Denver native, will manage business and marketing operatinos. be at the helm in the kitchen, creating an authentic, simple menu featuring high quality, fresh ingredients.

The restaurant has a sleek look, with mahogany and steel stools, plus a 20-seat horseshoe-style sushi bar. This being Colorado, beetle-kill pine is incorporated into the design.

Since this is a hand-roll bar, sushi is rolled as orders are receivd. Featured ingredients include blue crab, spicy tuna, lobster and uni. Rotating ashimi dishes will include hamachi, salmon and tuna poke.

A liquor license is in the works.
