that opened on Broadway in Denver this winter — with lines around the block during a snowstorm — is rapidly expanding in Colorado.
It’s the first state outside Texas, where opened Torchy’s Tacos as a food truck, to have these restaurants, which are cult favorites on the food scene.
Torchy’s Tacos locations will open soon in Greenwood Village at 8505 E. Arapahoe Road, and in Stapleton at 8281 Northfield Blvd.
They will be followed by Torchy’s Tacos popping up in Westminster and Fort Collins.
Brittany Platt, Torchy’s Tacos marketing director, said the Stapleton restaurant will open June 7.
Four months after opening in Denver, Torchy’s Tacos was mobbed during Monday’s lunch hour. The bar was full, along with the main dining room, and most of the second dining room. Diners ranged from a suit-and-tie businessman to young parents with babies and toddlers in tow.
Dale Decesare, who works nearby, was eating there for the first time.
“We’ve been watching,” he said. “But there’s always a line out the door. It’s not surrounded by office buildings, so I’m not sure where everyone is coming from.”
At 12:30 p.m. Monday, the line was half as long, so he ventured over.
Some people aren’t fazed by the expansion of Torchy’s Tacos throughout metro Denver, saying they work and live downtown, but Decesare is particularly excited to hear about Greenwood Village.
That would be great,” he said. “I live near there.”
